EGGLESS CHOCOLATE CHUNKS BANANA CAKE

Thinking of a combination such as chocolates and bananas makes me drool as I love both ingredients. Sitting in my garden and gazing at the home grown bananas, wanting to make a super moist and scrumptious cake, made me think of mouth melting chocolate as well. Few days back, two people from my family asked me to make their own personal favourite cakes; chocolate cake and banana cake and it made me puzzle as to which one to bake.
I love growing fruits and what better place to do this in than your own garden. Baking with fresh ingredients is so me! Finally I came up with chocolate banana cake which goes well with the idea to serving both the people. Flavorful cake which not only is healthy with bananas but is also luscious with melting chocolate chunks.
This cake is best for serving with tea or at dessert with a scoop of vanilla ice-cream. The final product looked tempting and those two people loved my fusion idea. I love it when other people give me ideas and simply a fusion is created.

INGREDIENTS
1 ½ cup all-purpose flour
½ cup castor sugar
½ tsp baking soda
1 tsp baking powder
½ cup condensed milk
½ cup melted butter
2 mashed bananas (rotten)
½ tsp cinnamon
2 handful chopped dark chocolate
100 ml milk
PROCEDURE
Pre-heat the oven to 180C. Prepare the baking tin with baking spray.
Sift flour, baking powder, baking soda and cinnamon powder. Set aside.
Whisk together melted butter, sugar, mashed bananas and condensed milk till creamy and smooth in texture.
Gradually add the flour mixture and milk, alternating them. (fold in) NO BEATING.
On the side, dust the chocolate in a pinch of flour before adding to the batter.
Add the chopped dark chocolate to the batter. Fold gently.
Pour the batter in the prepared baking tin and bake for 25 minutes or till a skewer inserted turns out clean.
Remove from oven and cool on cooling rack before serving or eating.
NOTES
Dusting the chocolate with flour is necessary as without it the chocolate will sink to the bottom of the baking tin. Dusting provides a shell for the chocolate chunks and thus sticks to the batter.
Convection oven temperatures – 160C. for 30-36 minutes
